{Taste of the Coast} Island Cookies

My beach sister, Caron, of Caron’s Beach House made these delectable cookies last summer.  Caron is one of those people that I instantly bonded with when we met online so it’s no wonder that we both love cookies and the beach ;o)

She had been having a really rough week and was craving chocolate ‘comfort’ cookies last June. She found a White Chocolate Chip, Coconut & Walnut recipe on the back of the White Chocolate package (what a find!) which she fondly calls, Island Cookies.

My tummy is growling while writing this, so I better grab the flour and whip up a batch!! Thanks, Caron.

Island Cookies by Everything Coastal

1 2/3 cup flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter or margarine. (I like to use margarine in cookies – seems to make them a little softer and gooey)
3/4 cup packed brown sugar
1/3 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
2 cups (12 oz) white chips
1 cup coconut flakes – toasted if you would like
3/4 cup macadamia nuts or walnuts

Heat oven to 375.
Mix butter/margarine and sugars, until light and fluffy.
Add eggs and vanilla.
Mix together dry ingredients and add them to sugar mixture.
Then blend in coconut, chips, and nuts.
Bake 8-10 minutes.

Enjoy every bite!
